At Two Moons Distillery, we believe that every ingredient carries a story — from the hands that grow it to the journey it takes before reaching the glass. For the past two years, we have been collaborating with LoCoFARMS, a local farm growing seasonal produce in Hong Kong, to create limited-edition gins that celebrate the flavours of each harvest.
Unlike a traditional collaboration built around a fixed recipe, each release is shaped by the ingredients available at the time. Working closely with the farm, we discover what the season brings and explore how these fresh, locally grown ingredients can be transformed through distillation.
Our first collaboration featured Shiso Gin, created when LoCoFARMS had an abundant harvest of shiso. Through distillation, we were able to capture the herb’s distinctive aromatic character and create a spirit that allowed the season’s harvest to continue beyond the farm.

The following year, we created Citron & Ginger Gin, bringing together the bright citrus notes of locally grown citron with the warmth and depth of ginger, harvested and dried right here in Hong Kong.
This approach reflects a long tradition of collaboration between farmers and distillers around the world. In many regions, seasonal fruits and crops are transformed into spirits such as eau de vie, preserving the character of a harvest while creating new ways for people to experience and appreciate agricultural produce. For us, these collaborations are a valuable opportunity to learn more about Hong Kong’s local agriculture — understanding the challenges farmers face, discovering new ingredients, and finding ways to create greater value from what is grown locally.
Each limited-edition gin is a snapshot of a particular season, shaped by the land, the farmers and the ingredients available at that moment. No two releases are exactly the same and it’s truly a celebration of the people behind Hong Kong’s agriculture, showcasing the possibilities of local produce and how it can be shared and enjoyed long after their growing season has passed!
